Protein Thai Curry Chicken Skewers with Coconut Peanut Dip

Ingredients:

For Chicken Skewers:

  • 1 lb chicken breast, cubed
  • ¼ cup coconut milk
  • 4 tbsp Peanut Butter Chicken Protein Rub
  • 1 tbsp lime juice
  • Bamboo skewers (soaked 30 min)

For Coconut Peanut Dip:

  • ¼ cup peanut butter
  • ¼ cup coconut milk
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tbsp Peanut Butter Chicken Protein Rub
  • 1 tsp sesame oil
  • Chopped peanuts & cilantro for garnish

Instructions:

  1. Marinate Chicken: Mix coconut milk, Peanut Butter Chicken Protein Rub, and lime juice. Toss in chicken cubes and marinate 30 min (or overnight).
  2. Grill Skewers: Preheat grill to medium-high. Thread chicken onto skewers and grill 5-7 min per side until cooked through.
  3. Make Dip: Whisk peanut butter, coconut milk, soy sauce, lime juice, honey, and sesame oil until smooth.
  4. Serve & Garnish: Remove chicken from skewers, serve with dip, and top with chopped peanuts & cilantro. Enjoy!
