Ingredients:
For Chicken Skewers:
- 1 lb chicken breast, cubed
- ¼ cup coconut milk
- 4 tbsp Peanut Butter Chicken Protein Rub
- 1 tbsp lime juice
- Bamboo skewers (soaked 30 min)
For Coconut Peanut Dip:
- ¼ cup peanut butter
- ¼ cup coconut milk
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp honey
- 1 tbsp Peanut Butter Chicken Protein Rub
- 1 tsp sesame oil
- Chopped peanuts & cilantro for garnish
Instructions:
- Marinate Chicken: Mix coconut milk, Peanut Butter Chicken Protein Rub, and lime juice. Toss in chicken cubes and marinate 30 min (or overnight).
- Grill Skewers: Preheat grill to medium-high. Thread chicken onto skewers and grill 5-7 min per side until cooked through.
- Make Dip: Whisk peanut butter, coconut milk, soy sauce, lime juice, honey, and sesame oil until smooth.
- Serve & Garnish: Remove chicken from skewers, serve with dip, and top with chopped peanuts & cilantro. Enjoy!
