Creamy Peri Peri Chicken Pasta

Ingredients

For the Pasta:

  • 12 oz pasta (penne or fettuccine)

For the Sauce:

  • 2 tbsp olive oil
  • 1 lb chicken breast, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 yellow bell pepper, diced
  • 3 tbsp Peri Peri Seasoning
  • 1/2 tbsp Zesty Italian Seasoning
  • 4 tbsp Smokey Barbecue Rub & Seasoning
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped green onions or parsley, for garnish

Instructions

  1. Cook Pasta:
    Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and set aside.
  2. Cook Chicken:
    In a large skillet, heat olive oil over medium heat. Add sliced chicken, seasoning it with Peri Peri Seasoning, Zesty Italian Seasoning, and Smokey Barbecue Rub & Seasoning. Cook for 6-8 minutes until chicken is fully cooked and golden. Remove from skillet and set aside.
  3. Sauté Vegetables:
    In the same skillet, add onion, garlic, and yellow bell pepper. Cook for 4-5 minutes until softened and fragrant.
  4. Make Creamy Sauce:
    Stir in heavy cream and bring to a simmer. Gradually whisk in Parmesan cheese until sauce becomes thick and creamy. Adjust salt and pepper to taste.
  5. Combine Chicken & Pasta:
    Return cooked chicken and pasta to the skillet, tossing everything in the creamy sauce until well coated.
  6. Garnish & Serve:
    Garnish with chopped green onions or parsley and serve hot.
