Ingredients

For the Salmon Meatballs:

  • 1 lb fresh salmon, finely chopped or ground
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp Lemon Pepper Seasoning
  • 5 tbsp Smoked Salmon Rub & Seasoning
  • 1 tbsp lemon juice
  • 1 tbsp olive oil (for cooking)

For the Avocado Cilantro Sauce:

  • 1 ripe avocado
  • 1/2 cup fresh cilantro
  • 1 clove garlic
  • 1/4 cup Greek yogurt or sour cream
  • 1 tbsp lime juice
  • Salt and pepper, to taste
  • Water, as needed for consistency

Instructions

  1. Make the Meatballs:
    In a bowl, combine chopped salmon, breadcrumbs, egg, garlic, parsley, Lemon Pepper Seasoning, Smoked Salmon Rub & Seasoning, and lemon juice. Mix well and form into 1-inch meatballs.
  2. Cook Meatballs:
    Heat olive oil in a skillet over medium heat. Add salmon meatballs and cook for 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
  3. Prepare Avocado Cilantro Sauce:
    In a blender or food processor, combine avocado, cilantro, garlic, Greek yogurt, lime juice, salt, and pepper. Blend until smooth, adding a little water as needed for a creamy consistency.
  4. Serve:
    Drizzle the creamy avocado cilantro sauce over the salmon meatballs. Garnish with extra chopped cilantro if desired. Serve warm.
