Ingredients
For the Salmon Meatballs:
- 1 lb fresh salmon, finely chopped or ground
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 3 tbsp Lemon Pepper Seasoning
- 5 tbsp Smoked Salmon Rub & Seasoning
- 1 tbsp lemon juice
- 1 tbsp olive oil (for cooking)
For the Avocado Cilantro Sauce:
- 1 ripe avocado
- 1/2 cup fresh cilantro
- 1 clove garlic
- 1/4 cup Greek yogurt or sour cream
- 1 tbsp lime juice
- Salt and pepper, to taste
- Water, as needed for consistency

Make the Meatballs:
In a bowl, combine chopped salmon, breadcrumbs, egg, garlic, parsley, Lemon Pepper Seasoning, Smoked Salmon Rub & Seasoning, and lemon juice. Mix well and form into 1-inch meatballs. -
Cook Meatballs:
Heat olive oil in a skillet over medium heat. Add salmon meatballs and cook for 4-5 minutes on each side until golden brown and cooked through. Remove and set aside. -
Prepare Avocado Cilantro Sauce:
In a blender or food processor, combine avocado, cilantro, garlic, Greek yogurt, lime juice, salt, and pepper. Blend until smooth, adding a little water as needed for a creamy consistency. -
Serve:
Drizzle the creamy avocado cilantro sauce over the salmon meatballs. Garnish with extra chopped cilantro if desired. Serve warm.
