Ingredients

For the Salmon:

  • 4 salmon fillets (about 6 oz each)
  • 2 tbsp Smoked Salmon Rub & Seasoning (used generously to coat salmon)
  • 2 tbsp olive oil

For the Creamy Florentine Sauce:

  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp Lemon Pepper Seasoning
  • Salt and pepper to taste
  • Fresh lemon juice (optional, for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

1. Cook the Salmon:
Coat salmon with Smoked Salmon Rub & Seasoning. Heat oil in a skillet and sear the salmon, skin-side down, for 4-5 minutes per side. Set aside.

2. Make the Sauce:
Melt butter in the same skillet. Sauté garlic and onion for 2-3 minutes. Add heavy cream, chicken broth, and Parmesan. Stir until the sauce thickens.

3. Add Spinach and Tomatoes:
Stir in spinach, sun-dried tomatoes, and Lemon Pepper Seasoning. Cook for 2-3 minutes until the spinach wilts. Season with salt and pepper.

4. Serve:
Place salmon on plates and top with the creamy Florentine sauce. Garnish with parsley and optional lemon juice.
