Ingredients
- 6 skin-on, bone-in chicken thighs
- Salt, pepper, and olive oil for seasoning
- 1 tbsp Sausage Burger Seasoning
- 1 tbsp Spicy Lemon Chicken Seasoning
- ½ tsp Smokey Bacon Seasoning
- 8 oz andouille sausage, sliced
- 1 diced onion
- 1 diced green bell pepper
- 2 diced celery stalks
- 8 minced garlic cloves
- 1 tbsp tomato paste
- 2 tsp chicken base (Better Than Bouillon recommended)
- 1 (28 oz) can diced tomatoes
- Fresh parsley or green onions for garnish
Instructions
1. Prep the Chicken:
Season the chicken thighs with salt, pepper, Sausage Burger Seasoning, and Spicy Lemon Chicken Seasoning. Preheat the oven to 350°F.
2. Sear the Chicken:
Heat olive oil in a large Dutch oven over medium heat. Sear the chicken thighs skin-side down until golden brown, about 5-6 minutes. Remove and set aside.
3. Brown the Sausage:
In the same pan, brown the sliced andouille sausage. Remove and set aside.
4. Cook Vegetables:
In the same pan, sauté the diced onion, bell pepper, and celery until softened, about 3 minutes. Add garlic, Smokey Bacon Seasoning, and salt to taste. Cook for another 1-2 minutes.
5. Create the Sauce:
Stir in the tomato paste and chicken base. Add diced tomatoes with their juices and mix well.
6. Braise the Chicken:
Nestle the seared chicken and browned sausage into the sauce. Bring to a simmer, then transfer to the oven and cook uncovered for 50 minutes.
7. Finish and Serve:
Garnish with fresh parsley or green onions. Serve over rice, mashed potatoes, or with crusty bread for dipping.
