- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15-ounce) can pumpkin puree
- 3 cups vegetable or chicken broth
- 1/2 cup heavy cream
- 3 tbsp Pumpkin Spice Seasoning (used generously)
- Salt and black pepper to taste
- Fresh parsley or chives, chopped (for garnish)
Instructions
1. Sauté the Aromatics:
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until softened. Stir in minced garlic and cook for another minute.
2. Add Pumpkin and Broth:
Add pumpkin puree and broth to the pot. Bring to a simmer and cook for 10 minutes, allowing the flavors to blend.
3. Blend the Soup:
Use an immersion blender to puree the soup until smooth, or carefully transfer it to a blender in batches, then return it to the pot.
4. Add Cream and Seasoning:
