Ingredients
- 1 tbsp vegetable oil
- 2 tbsp red curry paste
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 1 can (14 oz) coconut milk
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup chicken broth
- 1 red bell pepper, thinly sliced
- 1 cup snow peas
- 1 cup sliced bamboo shoots
- 1 tbsp lime juice
- 1/4 cup fresh basil leaves
- 2 tbsp Lime Chilli Seasoning
- 3 tbsp Spicy Lemon Chicken Seasoning
- 1 tsp Zesty Fish Seasoning
Instructions
1. Heat the Oil:
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the red curry paste and sauté for 1-2 minutes until fragrant.
2. Cook the Chicken:
Add the chicken slices and sprinkle with Spicy Lemon Chicken Seasoning. Cook until the chicken is no longer pink.
3. Add Liquid and Seasoning:
Stir in the coconut milk, fish sauce, brown sugar, chicken broth, and Fish Seasoning. Bring to a simmer.
4. Add Vegetables:
Add the red bell pepper, snow peas, and bamboo shoots. Cook for 3-4 minutes, until the vegetables are tender but still crisp.
5. Add Finishing Touches:
Stir in lime juice, Lime Chilli Seasoning, and fresh basil leaves. Season with salt and pepper to taste.
6. Serve:
Serve hot with steamed jasmine rice for a complete meal.
