2 boneless, skinless chicken breasts

4 tbsp Protein Chicken Rub

2 tbsp soy sauce

2 tbsp honey

2 tbsp sesame oil

3 cloves garlic, minced

1 tbsp rice vinegar

1 tbsp cornstarch

1 cup jasmine rice, cooked

½ cucumber, sliced

¼ cup cherry tomatoes, halved

¼ red onion, sliced

1 tbsp sesame seeds, toasted

2 green onions, chopped

Instructions:

Season & Cook Chicken: Coat chicken with Protein Chicken Rub. Heat oil in a skillet over medium heat, cook for 6-7 min per side until golden and cooked through. Let rest, then slice.

Make Glaze: Whisk soy sauce, honey, sesame oil, garlic, rice vinegar, and cornstarch. Simmer in the same skillet until thickened (2-3 min).

Assemble & Serve: Layer rice, sliced chicken, and glaze. Add cucumbers, tomatoes, and red onion. Garnish with sesame seeds and green onions. Enjoy!
