Protein Garlic Soy Chicken with Jasmine Rice & Veggies

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 4 tbsp Protein Chicken Rub

  • 2 tbsp soy sauce

  • 2 tbsp honey

  • 2 tbsp sesame oil

  • 3 cloves garlic, minced

  • 1 tbsp rice vinegar

  • 1 tbsp cornstarch

  • 1 cup jasmine rice, cooked

  • ½ cucumber, sliced

  • ¼ cup cherry tomatoes, halved

  • ¼ red onion, sliced

  • 1 tbsp sesame seeds, toasted

  • 2 green onions, chopped

  • Olive oil

Instructions:

  1. Season & Cook Chicken: Coat chicken with Protein Chicken Rub. Heat oil in a skillet over medium heat, cook for 6-7 min per side until golden and cooked through. Let rest, then slice.

  2. Make Glaze: Whisk soy sauce, honey, sesame oil, garlic, rice vinegar, and cornstarch. Simmer in the same skillet until thickened (2-3 min).

  3. Assemble & Serve: Layer rice, sliced chicken, and glaze. Add cucumbers, tomatoes, and red onion. Garnish with sesame seeds and green onions. Enjoy!
