Ingredients

For the Salad:

  • 8 oz fresh spinach (or baby spinach)
  • 1 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup sliced radishes (optional)
  • 3 tbsp Everything Bagel Seasoning
  • 1 green onion, sliced (for garnish)

For the Dressing:

  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp sugar (or honey)
  • 1 tsp Lime Chili Seasoning
  • 1 tbsp tahini (optional, for creaminess)

Instructions

  1. Prepare Spinach:
    Blanch spinach in boiling water for 30 seconds until wilted, then drain and rinse under cold water. Squeeze out excess water and roughly chop.
  2. Make Dressing:
    Whisk soy sauce, rice vinegar, sesame oil, sugar, Lime Chili Seasoning, and tahini (if using) until smooth.
  3. Combine Salad:
    In a large bowl, mix spinach, cucumber, shredded carrots, and radishes. Drizzle with dressing and toss gently.
  4. Serve:
    Transfer to a serving dish, sprinkle with Everything Bagel Seasoning and green onion. Chill for 15-20 minutes if desired.
