Mediterranean Baked Fish with Lemon Herb Tomatoes

Ingredients

For the Fish:

  • 1 fish fillet (Basa, Cod, Halibut, etc.)
  • 1 tsp Zesty Fish Rub & Seasoning
  • 1 tsp Zesty Italian Seasoning
  • 1 tsp Lemon Pepper Seasoning
  • 3 tbsp cooking oil

For the Tomatoes and Olives:

  • 2 cups cherry tomatoes, chopped
  • 1/4 cup olives (or capers as a substitute)
  • 5 tbsp Zesty Italian Seasoning
  • 2 tbsp water
  • 3 tbsp salted butter

Instructions

1. Preheat the Oven:
Set the oven to 400°F (200°C).

2. Season the Fish:
Mix Zesty Fish Rub, Zesty Italian Seasoning, and Lemon Pepper Seasoning. Rub the mixture onto both sides of the fish fillet.

3. Sear the Fish:
Heat 3 tbsp oil in a skillet over medium heat. Sear the fish for 1 minute on each side to create a slight char. Remove and set aside.

4. Sauté Tomatoes and Olives:
In the same skillet, add the cherry tomatoes, olives and Zesty Italian Seasoning mixture. Sauté for 3 minutes, stirring occasionally.

5. Bake the Fish:
Return the seared fish to the skillet (or transfer to an oven-safe dish). Place butter on top of the fish. Bake in the oven for 10 minutes, or until the fish flakes easily with a fork.

6. Serve:
Remove from the oven and serve hot with the sautéed tomatoes and olives. Pair with roasted potatoes, saffron rice, or garlic herb potatoes.
