Ingredients

  • 1 whole chicken, butterflied
  • Salt and pepper, to taste
  • ½ cup mayonnaise
  • 2 tbsp butter, melted
  • 60 ml lemon juice (about 4 tbsp)
  • 2 tbsp Peri Peri Seasoning (used generously)
  • 1 tbsp Lime Chilli Seasoning (used generously)
  • Handful fresh parsley, finely chopped
  • 4 garlic cloves, minced

Instructions

1. Preheat the Oven:
Set the oven to 180°C (350°F).

2. Butterfly the Chicken:
Use kitchen shears to remove the backbone and flatten the chicken. Season both sides generously with salt, pepper, and an additional sprinkle of Peri Peri Seasoning and Lime Chilli Seasoning.

3. Prepare the Marinade:
In a bowl, mix together mayonnaise, melted butter, lemon juice, 2 tbsp Peri Peri Seasoning, 1 tbsp Lime Chilli Seasoning, parsley, and minced garlic. Stir until well combined.

4. Marinate the Chicken:
Rub the marinade generously all over the butterflied chicken, ensuring every part is well coated. Cover the chicken with foil.

5. Cook the Chicken:
Place the chicken on an oven tray and roast for 45 minutes, covered with foil to lock in moisture.

6. Brown the Chicken:
Remove the foil and allow the chicken to brown for an additional 10 minutes, or until the skin is golden and crispy.

7. Serve:
Garnish with extra parsley and serve with lemon wedges. You can also sprinkle more Lime Chilli Seasoning for an extra kick.
