Protein Lemon Herb Salmon with Roasted Veggies

Products Used In This Recipe

Ingredients:

  • 4 salmon fillets (6 oz each)

  • 2 tbsp Fish Protein Rub

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp black pepper

  • 1 tbsp unsalted butter, melted

  • 1 lemon, sliced

  • 2 tbsp fresh parsley, chopped

For Roasted Veggies:

  • 1 cup broccoli florets

  • 1 cup zucchini, sliced

  • 1 red bell pepper, sliced

  • 1 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

Instructions:

  1. Preheat Oven: Set to 400°F (200°C).

  2. Season Salmon: Rub fillets with Fish Protein Rub, olive oil, lemon juice, garlic powder, oregano, and black pepper. Place on a lined baking sheet.

  3. Prepare Veggies: Toss broccoli, zucchini, and bell pepper with olive oil, salt, and pepper. Spread around the salmon on the baking sheet.

  4. Bake: Drizzle melted butter over salmon. Top with lemon slices. Bake for 12-15 min until the salmon flakes easily with a fork.

  5. Serve & Garnish: Sprinkle with fresh parsley and enjoy!
