Ingredients:

4 salmon fillets (6 oz each)

2 tbsp Fish Protein Rub

1 tbsp olive oil

1 tbsp lemon juice

1 tsp garlic powder

1 tsp dried oregano

½ tsp black pepper

1 tbsp unsalted butter, melted

1 lemon, sliced
-
2 tbsp fresh parsley, chopped
For Roasted Veggies:

1 cup broccoli florets
-
1 cup zucchini, sliced
-
1 red bell pepper, sliced

1 tbsp olive oil
-
½ tsp salt
-
½ tsp black pepper
Instructions:

Preheat Oven: Set to 400°F (200°C).

Season Salmon: Rub fillets with Fish Protein Rub, olive oil, lemon juice, garlic powder, oregano, and black pepper. Place on a lined baking sheet.

Prepare Veggies: Toss broccoli, zucchini, and bell pepper with olive oil, salt, and pepper. Spread around the salmon on the baking sheet.

Bake: Drizzle melted butter over salmon. Top with lemon slices. Bake for 12-15 min until the salmon flakes easily with a fork.

Serve & Garnish: Sprinkle with fresh parsley and enjoy!
