Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup Southernfried Coating (used generously for coating)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup oil for frying
For the Smokey BBQ Fries:
- 4 large potatoes, cut into fries
- 2 tbsp olive oil
- 5 tbsp Smokey Barbeque Rub & Seasoning
Instructions
1. Prepare the Fries:
Preheat the oven to 425°F (220°C). Toss the potato fries with olive oil, Smokey Barbeque Rub & Seasoning, garlic powder, salt, and pepper. Spread them evenly on a baking sheet and bake for 25-30 minutes, turning halfway through until golden and crispy.
2. Coat the Chicken:
Season the chicken breasts with salt, pepper, and paprika. Dredge each breast in flour, dip into the beaten eggs, and then coat generously with Southernfried Coating.
3. Fry the Chicken:
Heat oil in a large skillet over medium-high heat. Fry the chicken breasts for 5-7 minutes per side until golden and crispy, or until the internal temperature reaches 165°F (74°C).
4. Serve:
Serve the crispy Southern-fried chicken alongside the smokey BBQ fries. Garnish with fresh herbs if desired.
